No, the user is not always correct, designs should not be created for the individual person but for the activities that many people share. This is because one individual may have very different needs for a design, so looking at an activity most people do and designing the feature/product with that in mind will serve many more people.
No, the designer should not change a design for one or more people because it may be a good change for those few people, but for the rest it may be more harmful than helpful. Everyone has different needs and opinions, but people adapt to technology, therefor it should be designed generally for the target groups.
User centered design is focusing specifically on the people, creating a persona that fits in to someone who would use the product, and designing it for those sorts of people. Activity centeted design is focusing on the activities that the target group or people in general do, and designing with those activities in mind.
With project #2, other ways I could have done research was immersion, which was going to the gym and trying out the machine by myself and figuring out what confused me about the machine and how others may feel the same way about that.
